Ingredients:
- 600 g large whole prawns
- 2 tbsp cornflour, plus extra for thickening
- 1.5 litres vegetable oil, for deep frying
- 50 g butter
- 10 cloves garlic
- 1 tsp fish sauce
- 1 tbsp Shaoxing wine
- a good pinch of sugar
Method:
- Begin by peeling and butterflying the large prawns, utilizing the shells to create a quick fish stock.
- Velvet the prawns by marinating them in a slightly alkaline solution. Combine water and cornflour, massaging the mixture with the prawns.
- Flash cook the prawns in a deep frying pan with vegetable oil. Once cooked, promptly remove and drain them.
- Heat a cast iron skillet on a cooker flame.
- Roughly chop the Kangaroo Island garlic, so it doesn’t cook too quickly in the butter and burn.
- Melt butter in the skillet, add the chopped Kangaroo Island garlic, and cook on low heat to infuse flavors without browning the garlic too quickly.
- Introduce fish stock and other ingredients to the pan, thickening the mixture with a touch of cornflour.
- Toss the cooked prawns into the pan, ensuring they are well-coated with the flavorful sauce.
- Slice onions and place them on the hot skillet to prevent overcooking of the prawns.
- Load the prawns on top, and your delectable dish is ready to be served.

For a finger feast, crusty bread is the perfect option for mopping up the fantastic butter sauce. Steamed jasmine or basmati rice is also a great choice to soak up the delicious flavours.
